Kolache - Crazy Recipe Monday!

Here we go!
This recipe is so easy and the results are wonderfully fluffy, tender pastries. Fill them with preserves or a cinnamon crumb mixture.
Kolache
1 c. unsalted butter (room temp.)

1/2 c. sugar
1 1/2 tsp salt (this should be reduced if you use salted butter, use 1 tsp.)
2 c. milk
1/2 c. cream (or you can use 2 1/2 c. milk if you don't have cream on hand)
4 egg yolks
1/2 tsp. lemon extract (vanilla if you're making cinnamon rolls with this dough)
1 1/2 Tbsp yeast (or 2 pkgs)
5 1/2 c. all-purpose flour
Your favorite preserves, cinnamon topping mixture, or lemon curd.
Directions:
Cream butter & sugar together.
Microwave milk & cream mixture for 3 minutes.
To the creamed butter & sugar, blend in with a cake mixer: salt, hot milk/cream, egg yolks, lemon (or vanilla) extract. Cool mixture to 105 degrees, then add yeast. Let stand for 5 minutes. Add flour and mix well, making sure all the flour is mixed in. Dough will be sticky.


and roll between well-floured hands.
Set 2 inches apart on a parchment covered cookie sheet.


Fill with fruit preserves, lemon curd,
(or cinnamon mixture - recipe at the end of the post).

Cinnamon Mixture (not pictured)1 Tbsp Cinnamon
1/2 c. sugar
2 Tbsp flour
1/2 stick of butter
Mix into a course crumb and fill pastries.
